Orange Spice French Toast

French toast is a favorite breakfast treat. Reminiscent of Sunday mornings and sizzling pans, this dish is sure to bring the family together, a delicious and filling way to start the day.

I woke up craving french toast when I remembered that I had a fresh loaf of cashew bread, baked the day before! I wanted to bring some holiday flavor into the dish and orange spice sounded like a perfect combination with the bread.

This is a great twist on a classic comfort and an easy way to take your breakfast from ordinary to gourmet.

Start to finish: 22 minutes

Serves: 4

  • Zest from 1 medium orange
  • 1/2 bread loaf
  • 3 eggs
  • 1/4 cup milk or non dairy alternative
  • 1 tablespoon vanilla
  • 1 tablespoon cinnamon
Start with a loaf of bread, in this case I was using homemade cashew bread. Slice your bread. this recipe works for about half of a loaf or about four servings.
Next, stir together the rest of the ingredients in a flat bottom bowl for soaking the bread in. Make sure the eggs are mixed well with everything else.
Soak each piece of bread in the wet mixture on both sides. Make sure the bread is saturated. Heat up a large pan, and coat the bottom with oil. I used coconut oil, but any high temperature oil will work. You could also use butter. Take the pieces of bread and cook them on medium heat for a few minutes on each side. They should have a light to medium brown outside layer. Make sure the middle is cooked through and then move on to the next pieces.
Finish cooking all the pieces of French toast and serve with chopped up fruit, jam, or just maple syrup.
